Sales of Chicken Thighs, Dark Meat on the Rise

Sales of chicken thighs and dark meat have grown immensely in the past 10 years according to Tyson Foods, reports Bloomberg. As such, sales of chicken breast are decreasing as consumer palates shift.

Sabrina Bewley, Tyson’s senior director of foodservice poultry marketing and innovation, says consumer consumption of more Latin, Indian, and East Asian dishes is driving the change, as those types of dishes often feature dark meat. John Umlauf, senior vice president of culinary operations at frozen-food maker Saffron Road confirmed, saying, “The dark meat has more blood in it. That’s why it’s juicier.
