A team of researchers at Trinity College Dublin have found that gin made from peas was more environmentally-friendly than gin made from wheat, reports Food & Wine. The pea gin was rated significantly lower on 12 out of 14 environmental impacts evaluated, including climate change through water and air pollution and fossil energy consumption.
The taste is up to snuff, too. "Following two distillations plus an infusion with botanical ingredients including juniper and coriander, the final gin retains the same sumptuous, aromatic flavor as if made from cereal grain," says Kirsty Black, manager of Scotland’s Arbikie Distillery, who has partnered with the researchers to produce test batches of the gin.
