The USDA has finalized the New Swine Slaughter Inspection System, which will allow companies like Tyson Foods and Smithfield Foods to increase the number of pigs they slaughter every hour, reports Food & Wine. In addition, these companies will now be allowed train their own employees to sort and remove pigs that have defects before being processed, something that has previously be done by a federal inspector. The USDA will still inspect the animals before and after slaughter.
"This regulatory change allows us to ensure food safety while eliminating outdated rules and allowing for companies to innovate,” Secretary of Agriculture Sonny Perdue said in a statement. Full Story
