Creamistry is partnering with cocoa producer Barry Callebaut to launch Ruby Cacao ice cream. Ruby Cacao is naturally pink and derived from a ruby cocoa bean available only in Ecuador, Brazil, and Ivory Coast. The product features a slightly fruity, berry-like flavor with a smooth and creamy base profile that's reportedly ideal for ice cream. Creamistry specializes in customizable made-to-order liquid nitrogen ice cream, and will make the Ruby Cacao flavor available in any selection.
Barry Callebaut rolled out Ruby Cacao in Asia, Europe, Australia, and New Zealand, but only launched the product in the U.S. and Canada on May 14. Creamistry will be first in the U.S. to offer the product in an ice cream concept.
