Reyanne Mustafa of SoulMuch stops by SFA News Live at the Winter Fancy Foods Show to discuss the origins of SoulMuch, doing guerilla market research, and how to take on the issue of food waste. Part of the Seeds&Chips exhibit at the show, SoulMuch partners with large scale restuarants to repurpose leftover cooked brown rice into flour that can be used to bake cookies and other confections. Explaining how she stumbled onto the issue while working in foodservice, she explains, "We thought this problem was just at our restaurant, but then we realized it was happening at just about every big chain restaurant ... it is really hard for people to imagine the scale of this tragedy until you're in it."
