Renmatix, the maker of plant-based egg replacement ingredient Simple Cellulose, signed a distribution agreement with The Ingredient House, a supplier of specialty food and beverage ingredients, which currently sells to many of the top 20 food and beverage manufacturers in the U.S. The companies see the potential to replace eggs in baked goods and are targeting the $400 million cost-in-use egg replacement market for baked goods in the U.S.
Made through Renmatix's Plantrose process, Simple Cellulose is derived from pure plant materials and agricultural feedstocks. The ingredient allows food producers to replace eggs and fats and, according to the company, enhances the efficiency of texturizing ingredients and the moisture retention required for freshness extension, all while undercutting the cost of conventional ingredients.
Simple Cellulose has been used in gluten-free and vegan baked goods, including breads, muffins, cookies, and donuts. Future targets include soups and sauces, meat and dairy systems, and other food ingredient applications.
