About 300 poke businesses have opened each quarter in the U.S. from fourth quarter 2016 to second quarter 2018, at an annual rate of 61 percent, according to Yelp. Yelp noted the Hawaiian favorite first jumped to West Coast cities before moving to the East Coast, and then arrived in cities in the center of the country.
When compared to the growth of ramen, another cuisine that grew rapidly, poke had five times ramen's growth rate. Additionally, the "mouth share" of poke tripled in barely a year. Rice, tuna, and salmon remain the most popular poke bowl ingredients. Full Story
