Barry Callebaut Secured Permit for Ruby Chocolate Label

Barry Callebaut has secured a permit to label up to 60 million pounds of its ruby chocolate as such, reports Food Dive. The permit was published in the Federal Register and is effective for 15 months.

Ruby chocolate comes from a specific cacao bean that scientists can process into a dark pink chocolate with a taste reminiscent of berries. Barry Callebaut unveiled the chocolate to consumers in Asia in 2017 and was only just made widely available to manufacturers in the U.S. and Canada in May. Full Story
