As part of SFA's Future Friday series, Max Kaniger, founder and executive director of Kanbe's Markets explains how his company aims to eliminate food desserts by helping mom and pop stores sell fresh, healthy food options. In his What's the Big Idea talk at the Winter Fancy Food Show, Kaniger explains that access and waste are two of the biggest issues of the food system, but this doesn't make sense. "There are 42 million people across the country who don't have consistent access to fresh, healthy, affordable food. And yet we're throwing away millions of tons of food every year," he says, "It just didn't make sense to me. These two main issues seem to be able to fix each other." Though Kanbe's Markets only exist within Kansas City, Kan. currently, Kaniger wants to scale his model to be replicated across the U.S.
