Cincinnati-based Blue Oven Bakery partnered with a local startup Uprising Food to launch a direct-to-consumer keto bread business, reports Cincinnati Business Courier. The bread, called the Keto Kube is made with baking powder rather than yeast, and other natural ingredients, including egg whites, psyllium husk, flax, apple cider vinegar, salt and water. Each slice contains 160 calories, 6 grams of protein, and 11 grams of fat.
So far, Uprising Foods has raised $250,000 from investors. CEO William Schumacher baked more than 200 loaves of keto bread as he experimented with recipes before he decided he needed the help of a baking expert. He approached Mark Frommeyer, co-owner of Blue Oven, about creating a bread, and they launched a joint venture using Frommeyer's recipe and wood-fired bakery.
Uprising makes bread by hand and ships it via UPS or Fedex. The loaf is 4 inches tall by 4 inches wide and 4 inches deep, and yields eight slices. A four-loaf package costs $48. Full Story
