University Invests in Plant-based Jerky Maker

The University of Michigan has invested $100,000 in Chicago-based Mindwell Snacks LLC, a maker of plant-based jerky, reports Crain's Detroit Business. Mindwell jerky is available in Plum Markets, and the company plans to launch in a large regional grocery chain in fall 2018.

The university's Zell Lurie Founders Fund is a student-managed $10 million seed fund that invests in companies created by current students at the Ross School of Business or recent alumni. Mindwell Snacks was launched by two entrepreneurs who got their master's degrees from the school in 2017. The founders claim that in addition to the health benefits of replacing meat in the diet, the legumes from which their jerky is made create fewer carbon emissions than protein from beef or lamb, according to the report. Full Story
