Nonesuch restaurant in Oklahoma City was named the best new restaurant of 2018, according to Bon Appetit. The restaurant is inspired by modern Nordic cooking, which is defined by hyper-local ingredients, minimal plating, and fermented, pickled, and cured foods. Nonesuch's tasting menu features dishes such as compressed courgette and fava–stuffed squash blossom, bison tartare on pork fat sablé, and salty buttermilk sorbet with sorrel juice.
